Collected from hives that are moved to the acacia belt for six weeks in spring, strained cold and jarred without heating or blending. It sets slowly and stays pale. Each jar carries the apiary and the extraction week.

Care & use
Keep the tin closed, dry and away from direct light. Steep a small pinch — ten to fifteen threads is enough for four servings — in two tablespoons of warm milk or water for twenty minutes before adding it to the dish, so the colour and flavour release fully. Good saffron does not need to be crushed to powder.
