This harvest
Morels cannot be farmed at any scale; they are walked for. These are foraged on the Pir Panjal slopes in April and May, sun-dried whole on cloth, then graded by cap. Soak in warm water for twenty minutes and keep the liquor — it is most of the flavour.
Hafiza blends our kahwa by hand: whole-leaf green tea, cardamom crushed at the moment of blending, cinnamon bark broken rather than ground, and saffron from the same lot as our tins. In April and May she is on the Pir Panjal slopes instead, walking for morels, which cannot be farmed at any useful scale and so are simply found or not found.

Care & use
Keep the tin closed, dry and away from direct light. Steep a small pinch — ten to fifteen threads is enough for four servings — in two tablespoons of warm milk or water for twenty minutes before adding it to the dish, so the colour and flavour release fully. Good saffron does not need to be crushed to powder.
